Yellow Butter Sponge Cake

 

It all began when I was 12 years old. My parents were restaurant owners since before I was born. And I was almost born in the kitchen, literally! My mom worked while pregnant with me until my birth. One month later she was back in the kitchen doing what she is so good at; cooking.

My mom used to take me to culinary classes with her. And when I was 12 years old I attended my first culinary class. Til this day I remember the words my mom said as we were walking up to the classroom. She said: “Here's a notebook, you better pay attention and take notes. You’ll be making this recipe as soon as we get back home”. That was the first cake I learned to make. The Yellow Butter Sponge Cake called (Pão de Ló) is my go to recipe and it's always a huge hit in every birthday, anniversary or just because celebration.

Ingredients

  • 5 eggs

  • 1 1/2 cups sugar

  • 2 cups flour

  • 1 cup warm milk

  • 2 tbsp butter

  • 1 tsp vanilla

  • 1 tbsp baking powder

Instructions

Separate egg whites and beat it until peaked. Add the yolks and sugar and beat until creamy (about 2 minutes). Add flour. Melt butter in the warm milk and add to the mixture. Beat on medium speed for about 2 minutes. Add the vanilla and beat enough to mix it in. At last, add the baking powder and beat at low speed just enough to mix it in.

Place batter in your favorite cake pan buttered and lightly floured.

Pre-heat oven at 350F. Reduce the oven temperature 325F and bake for about 30 minutes or until golden. Use a toothpick to check if inside is thoroughly cooked. If the toothpick comes out clean, your cake is done.
